Leftover Veggies in Peanut Sauce

I had bought ribs for dinner and they were good, but…there wasn’t enough to satisfy. Besides, we needed veggies. So, I went to the fridge to see what we have and I googled “meal ideas with peanut butter” and found a recipe, but I tweaked it use my leftovers and it was good.
Instructions:
Makes: 3-4 servings unless he’s hangry, then it’s 2😊
Prep Time: 10 minutes if you’re good with a knife. Just kidding.
Cooking Time: 10 minutes
Ingredients
Peanut Sauce:
½ red bell pepper
8 pieces of broccoli
1/2 cup of evaporated milk, but you can use milk or coconut. It’s your recipe to try different things
3 big table spoons full of peanut butter
2 big squirts of hoisin sauce
1 tbsp soy sauce
1 squirt hot sauce
1 tbsp spoon Olive oil or whatever you have to cook with
1 tbsp ginger chopped. I use the canned one
1 tbsp garlic chopped. I use the canned one
2 green onions
Directions:
Mix everything but the garlic, ginger and oil in bowl. If peanut butter is not soft, put in microwave for 30-45 seconds.
Heat the stovetop to medium or 7. Add the oil, garlic and ginger, then the onion and stir for about 2 minutes.
Add the veggies of your choice on top of the onions. Stir for a few minutes to get them soft.
Add the peanut sauce and cook for about 10 minutes.
